This 2-ingredient flourless pizza is one of my favorite quick meals when I want something satisfying without making traditional pizza dough. The crust is made from just mozzarella and eggs, creating a protein-rich base that is naturally gluten-free and low in carbohydrates. Topped with tomato salsa, fresh vegetables, and melted cheese, this pizza comes together in one pan in only a few minutes. It is perfect for a quick lunch, light dinner, or whenever a pizza craving strikes but you want a healthier option.

  1. Grate the mozzarella cheese.
  2. Beat the eggs in a bowl.
  3. Heat a non-stick skillet over medium heat.
  4. Sprinkle a layer of grated mozzarella evenly over the skillet.
  5. Pour the beaten eggs over the cheese.
  6. Cook for several minutes until the base becomes firm and lightly golden.
  7. Carefully flip the pizza base.
  8. Spread the salsa over the surface.
  9. Add the sliced cherry tomatoes and zucchini.
  10. Sprinkle with the remaining mozzarella.
  11. Cover the skillet with a lid.
  12. Cook for a few more minutes until the cheese melts and the bottom becomes nicely golden.
  13. Finish with fresh basil and serve immediately.
