These soft flourless red lentil buns are made with soaked red lentils, psyllium husk, olive oil, and baking powder. Naturally gluten-free and rich in plant-based protein and fiber, they're perfect for sandwiches, burgers, or enjoying on their own.

Rinse the red lentils thoroughly and soak them for at least 2 hours, preferably overnight.

Add the lentils and water to a blender and blend until completely smooth.

Transfer the mixture to a mixing bowl.

Add the salt, olive oil, psyllium husk, and baking powder.

Mix until everything is well combined.

Let the mixture rest for 10 minutes so the psyllium absorbs the liquid.

Lightly oil your hands and shape the dough into 6–8 buns.
