This summer, my garden is full of zucchini, so I’ve been experimenting with creative ways to use this amazing vegetable that my family loves. 🥒 These crispy zucchini waffles are one of my favorite ideas so far! They are golden and crunchy on the outside, soft inside, and incredibly easy to make. Serve them with your favorite dip for a quick summer breakfast, snack, or light meal.
