Traditional Balkan proja is a simple homemade cornbread made with cornmeal, flour, eggs, milk, oil, and fresh cheese. It’s soft, slightly crumbly, and rich in comforting homemade flavor.

Ingredients
  

  • 2 eggs
  • 300 ml milk
  • 100 ml oil
  • 300 g cornmeal
  • 150 g all-purpose flour
  • 1 baking powder about 10–12 g
  • 250 g fresh cheese more for extra moisture

Method
 

  1. Preheat the oven to 200°C (390°F).
  2. In a bowl, whisk the eggs.
  3. Add milk and oil and mix well.
  4. In a separate bowl, combine cornmeal, flour, and baking powder.
  5. Add dry ingredients into the wet mixture and stir until combined.
  6. Add fresh cheese and mix gently.
  7. Pour the batter into a greased and floured baking tray.
  8. Bake for about 35 minutes or until golden brown on top.
  9. Let it cool slightly before serving.

Notes

For a richer texture, add extra cheese.
Do not overmix the batter to keep it soft.
Best served warm with yogurt, sour cream, or kajmak.
You can store it for up to 2 days, but it tastes best fresh.
