Beef Soup in a Pressure Cooker + Semolina Dumplings

A rich and comforting beef soup made in a pressure cooker, served with soft semolina dumplings.

Ingredients
  

For the soup:
  • 500 –700 g beef ribs, shank, shoulder, or neck
  • 3 carrots
  • 2 parsley roots
  • piece of celery root
  • 1 spring onion
  • salt
  • whole black pepper
  • Vegeta optional
  • fresh parsley dill, and celery leaves
  • 2.5 L water
For the semolina dumplings:
  • 2 eggs
  • 7 tbsp semolina

Method
 

Soup:
  1. Place all ingredients into a pressure cooker and pour in water.
  2. Close the lid and cook on high heat until pressure builds.
  3. Reduce heat to low and cook for 35–40 minutes.
  4. Let the pressure release naturally, then carefully open.
  5. Strain the soup.
Dumplings:
  1. Mix eggs and semolina.
  2. Let the mixture rest for 10 minutes.
  3. Spoon dumplings into the strained soup.
  4. Cover and cook for 3–5 minutes.
  5. Turn off heat and let sit for 5 minutes.

Notes

Serve the soup hot.
The cooked meat and vegetables can be served separately.
