Activate yeast by mixing fresh yeast, 1 tbsp flour, 1 tbsp sugar, and lukewarm milk. Let it sit for 10 minutes.

In a large bowl, combine flour, activated yeast, egg, oil, vanilla sugar, lemon zest, and salt.

Knead into a smooth dough.

Cover and let the dough rest for 30 minutes.

Prepare filling by mixing poppy seeds, sugar, vanilla sugar, and boiling milk. Stir well and let cool slightly.

Divide dough into 2 equal parts and roll each into a rectangle.

Spread half of the filling on each dough piece and roll into a log.

Place on a baking tray and brush with egg yolk.
