Note
Why is this brownie recipe so interesting?
The surprising ingredient here is sweet potato. Instead of using flour, butter, or a large amount of sugar, this recipe uses roasted sweet potato and banana to create a naturally moist and soft brownie base.
It’s a fun recipe to try if you enjoy experimenting with healthier versions of classic desserts or simply want to see what vegetables and fruit can do in baking.
🍠 Why use roasted sweet potato?
Roasted sweet potato has a naturally sweet flavor and creamy texture. Once blended, it creates a smooth batter and helps keep the brownies moist without needing a large amount of added fat.
Roasting also concentrates the sweet potato's natural flavor, making it particularly good for this type of chocolate dessert.
🍌 The banana adds sweetness and moisture
A ripe banana works especially well here because it adds natural sweetness while contributing to the soft texture. The riper the banana, the sweeter and more flavorful the brownie will be.
🍫 Don't skip the chocolate topping
The chopped chocolate on top is optional, but I highly recommend it. It melts into the surface during baking and creates little pockets of extra chocolate in every bite.
For a more intense chocolate flavor, use dark chocolate.
Is this a traditional brownie?
Not at all — and that's the fun part! This is my creative, flourless version of a brownie. It won't have exactly the same texture as a classic butter-and-flour brownie, but it is soft, moist, chocolatey, and satisfying in its own way.
How do I get a fudgier texture?
Don't overbake it. The center should still be soft when you take the brownie from the oven. It will continue to set as it cools.
Let it cool before slicing
It's tempting to cut into the brownie immediately, but giving it some time to cool allows the texture to firm up. For especially clean slices, let it cool completely.
Make it even more chocolatey
You can add extra chopped dark chocolate to the batter, chocolate chips, or a little melted chocolate on top after baking.
Spice it up
The gingerbread spice might seem unusual in a brownie, but it works beautifully with sweet potato, banana, and chocolate. If you prefer a more classic chocolate flavor, you can reduce it or replace it with cinnamon.
