Chia Collagen Mini Cake
Description
Creamy chia and Greek yogurt mini cakes made with Wellbe Beauty Collagen Wildberry, layered with unsweetened biscuits and finished with 70% dark chocolate. A simple two-serving dessert with a refreshing berry flavor.

Prepare the Chia Mixture

Combine the chia seeds, Wellbe Beauty Collagen and Greek yogurt in a bowl.

Add 1 tablespoon of sweetener if desired. I used honey, but you can also leave it out.

Mix everything well and place in the refrigerator for about 1½ hours, allowing the chia seeds to absorb the yogurt and the mixture to become thick and creamy.
Assemble the Cakes

Place one whole unsweetened biscuit on the bottom of each serving.

Divide the prepared chia mixture between the two cakes and spread it evenly over the biscuits.

Place another whole biscuit on top of each one.

Melt the 70% dark chocolate and pour a thin layer over the top.

Refrigerate until the chocolate has set.
