Creamy Chia, Greek Yogurt & Wildberry Collagen Mini Cakes

A Dessert can be creamy, delicious and still fit beautifully into your everyday beauty and wellness routine. These Chia Collagen Cakes combine creamy Greek yogurt and chia seeds with a crunchy biscuit base and dark chocolate for a rich, satisfying finish.

I made them with Wellbe Beauty Collagen Wildberry with Rejuva® Complex formula, a collagen powder created with beauty and everyday wellness in mind. It contains PEPTAN® bioactive collagen hydrolysate with collagen types I, II and III, together with vitamin C, biotin, zinc, MSM, L-lysine and hyaluronic acid.

Collagen is an important protein naturally found in our skin, while vitamin C contributes to normal collagen formation and biotin and zinc contribute to the maintenance of normal skin and hair. This makes the combination especially interesting for women who want to incorporate collagen and beauty-supporting nutrients into their daily routine.

The Wildberry flavor adds a lovely fruity note to this creamy dessert, and the convenient 5 g portions make the collagen easy to use every day.

Description

Creamy chia and Greek yogurt mini cakes made with Wellbe Beauty Collagen Wildberry, layered with unsweetened biscuits and finished with 70% dark chocolate. A simple two-serving dessert with a refreshing berry flavor.

Ingredients

Instructions

Prepare the Chia Mixture

  1. Combine the chia seeds, Wellbe Beauty Collagen and Greek yogurt in a bowl.
  2. Add 1 tablespoon of sweetener if desired. I used honey, but you can also leave it out.
  3. Mix everything well and place in the refrigerator for about 1½ hours, allowing the chia seeds to absorb the yogurt and the mixture to become thick and creamy.

Assemble the Cakes

  1. Place one whole unsweetened biscuit on the bottom of each serving.
  2. Divide the prepared chia mixture between the two cakes and spread it evenly over the biscuits.
  3. Place another whole biscuit on top of each one.

  5. Refrigerate until the chocolate has set.

Note

Why Are These Chia Cakes So Creamy?

The chia seeds are responsible for much of the texture. When they sit in the Greek yogurt, they absorb moisture and swell, creating a thick, pudding-like consistency. This gives the filling its creamy texture without needing gelatin or cream.

Why Add Chia Seeds?

Chia seeds are a simple way to add fiber, plant-based fats and additional nutrients to a dessert. They also make the recipe more satisfying while helping create that thick, creamy texture.

Why Wellbe Beauty Collagen?

I used Wellbe Beauty Collagen Wildberry with Rejuva® Complex formula because the formula combines collagen peptides with several additional beauty-supporting nutrients.

It contains PEPTAN® bioactive collagen hydrolysate with collagen types I, II and III, as well as vitamin C, biotin, zinc, MSM, L-lysine and hyaluronic acid. According to Wellbe, the product is made with bovine collagen, comes in convenient 5 g portions and is laboratory tested and produced in Germany.

What Does Vitamin C Have to Do With Collagen?

Vitamin C has a specific nutritional role in collagen production. It contributes to normal collagen formation for the normal function of skin. This is one reason vitamin C is included in the Rejuva® Complex formula.

Why the Wildberry Flavor?

The wildberry flavor works especially well here because the chia and Greek yogurt mixture is naturally mild and creamy. The fruity collagen adds another layer of flavor without needing fresh fruit or additional flavoring.

Frequently Asked Questions

Expand All:

How long does the chia mixture need to chill?

Allow approximately 1½ hours in the refrigerator. This gives the chia seeds enough time to absorb the yogurt and thicken the mixture.

Are these cakes gluten-free?

The chia seeds, Greek yogurt and collagen are not wheat-based ingredients, but the biscuits are important to check. If you need the recipe to be strictly gluten-free, use certified gluten-free biscuits and check the labels of all packaged ingredients.
