This Fiber & Protein Sandwich is a simple way to make your own sandwich bread using red lentils, egg, and a little cottage cheese. There is no flour, yeast, or complicated dough involved. The lentils provide a good amount of plant-based protein and fiber, while the egg and cottage cheese add even more protein. Everything is blended until smooth and cooked directly in a toaster, making this a practical option for breakfast, lunch, or a quick snack. Once baked, simply cut it open and fill it with whatever you like for a simple homemade sandwich.

Note
Why is this sandwich high in protein and fiber?
Red lentils are the main source of both protein and fiber in this recipe. The egg and cottage cheese add additional protein, making the sandwich base more substantial than a simple flour-based bread.
Use soaked lentils
The recipe calls for 200 g of soaked red lentils, not 200 g of dry lentils. Soak the lentils for at least 2 hours, then rinse and drain them well before weighing or blending.
The toaster matters
Toaster strength and design can vary, so the cooking time may be different from one appliance to another. I cooked mine for approximately 15 minutes.
Use baking paper
Line the toaster with baking paper before adding the mixture. This helps prevent the batter from sticking and makes it easier to remove the finished sandwich bread.
Don't add too much filling
The bread is soft and homemade, so very heavy fillings can make it difficult to handle. Start with a moderate amount of filling and add more if needed.
Is it gluten-free?
The ingredients in this recipe are naturally gluten-free. If you need to follow a strict gluten-free diet, make sure all packaged ingredients are certified gluten-free and avoid cross-contamination.
Can I use a pan instead?
The recipe was developed for a toaster, but the mixture can also be experimented with in a good non-stick pan. The texture and cooking time may be different.
