No-Bake Chia Fruit Cake with Yogurt and Berries

This fresh and creamy chia fruit cake is a simple no-bake dessert made with yogurt, chia seeds, gelatin and fresh fruit. I used raspberries and blueberries, but you can easily adapt it with whatever fruit you have available.

🌱 BEWIT Organic Chia Seeds

For this recipe, I used BEWIT Organic Chia Seeds (Salvia hispanica). These organic chia seeds are a great ingredient to keep in the kitchen because they can be added to yogurt, puddings, spreads and other dishes. Thanks to their ability to absorb liquid, chia seeds naturally help create a thicker texture — which is exactly what makes them so interesting in this cake.

The chia seeds are organic and sourced from Paraguay. They have a mild, slightly nutty flavor and are naturally rich in fiber and contain protein and unsaturated fatty acids.

Why are chia seeds interesting in this recipe?

Chia seeds are especially useful in no-bake recipes because they absorb liquid and gradually swell, helping to create a thicker consistency. They can also be used in puddings and as a cooking ingredient for thickening mixtures.

In this cake, they work together with yogurt and gelatin to create a soft but sliceable texture — without baking.

Note

  • Choose your favorite fruit: Raspberries and blueberries work beautifully, but strawberries, peaches, cherries or other seasonal fruit can also be used.
  • The chia seeds help with texture: Because chia seeds absorb liquid, they contribute to the thicker, more substantial texture of the cake.
  • Give it enough chilling time: The cake needs time in the refrigerator for the gelatin to set and the chia seeds to absorb some of the liquid.
  • For a smoother texture: If you prefer a completely smooth cake, you can blend the yogurt and chia seeds before adding the gelatin and fruit.
  • Make it your own: You can use plain yogurt and add your own fruit or flavoring instead of using fruit yogurt.
  • Gluten-free: Chia seeds are naturally gluten-free. If you need a strictly gluten-free dessert, check that all packaged ingredients, especially the yogurt and gelatin, are certified gluten-free.

Frequently Asked Questions

Expand All:

Can I use plain yogurt?

Yes. Plain yogurt works perfectly. You can sweeten it to taste and add fresh fruit or vanilla if desired.

Why do chia seeds thicken the mixture?

Chia seeds naturally absorb liquid and swell, creating a thicker texture. This is why they are commonly used in puddings and other recipes where a thicker consistency is desired.

Does this cake need to be baked?

No. This is a completely no-bake dessert. The cake sets in the refrigerator thanks to the gelatin, while the chia seeds help contribute to the texture.
