This is one of those simple recipes that tastes like summer in the Balkans. Sweet red Kapia peppers are grilled directly on a hot gas grill until they become soft and their skins are beautifully charred. After a quick steaming step, the skins peel away easily, leaving tender, smoky-sweet peppers ready for a simple garlic marinade. The combination of cold-pressed sunflower oil, white vinegar, garlic, salt, and a touch of sugar is incredibly simple but gives the peppers so much flavor. I prepared these on my Napoleon gas grill, and I love how quickly it heats up and how easy it makes grilling even during the week.

Grilled Red Kapia Peppers
Description
Sweet red Kapia peppers are grilled on a gas grill until tender and lightly charred, then peeled and marinated with garlic, white vinegar, cold-pressed sunflower oil, and fresh parsley. A simple Balkan summer classic and the perfect side dish for a barbecue.

Preheat your gas grill to medium-high heat.

Arrange the fresh red Kapia peppers directly on the grill grates.

Grill the peppers on all sides, turning them as needed, until they become soft and the skins are darkened, blistered, and lightly charred.

I used my Napoleon gas grill for this recipe.

Transfer the grilled peppers to a large bowl and cover with a lid or plate.

Let them steam for about 15–20 minutes. This will help loosen the skins.

Once the peppers are cool enough to handle, carefully peel off the skins and remove the stems and seeds if desired.

Arrange the peeled peppers in a serving dish.

To make the marinade, combine the cold-pressed sunflower oil, finely chopped garlic, white vinegar, salt, and sugar.

Mix well and pour the marinade over the grilled peppers.

Sprinkle with freshly chopped parsley.

Let the peppers rest for at least 30 minutes so they can absorb the marinade.

Serve chilled or at room temperature.

Why are Kapia peppers perfect for grilling?
Kapia peppers are naturally sweet, with a long, slightly pointed shape that makes them excellent for grilling. The high heat of the gas grill softens the peppers while lightly charring the skins, giving them a delicious roasted and slightly smoky flavor.
Gas grill vs. oven
For this recipe, I recommend grilling the peppers directly on a gas grill rather than baking them in the oven. The direct heat gives the skins that characteristic dark, blistered surface and adds extra flavor.
Don't skip the steaming step
Once the peppers come off the grill, cover them while they are still hot. The trapped steam helps separate the skins from the flesh, making them much easier to peel.
Let the peppers rest in the marinade
Although you can serve them immediately, they become even better after resting. The soft peppers absorb the garlic, vinegar, and sunflower oil, creating a much deeper flavor.
A great make-ahead side dish
These grilled peppers are perfect for summer gatherings because you can prepare them ahead of time. Make them before your barbecue, let them marinate, and simply bring them to the table when you're ready to eat.
Don't waste the marinade
