Note
Why do I let the batter rest?
Chia seeds absorb liquid and form a gel-like texture, which helps the batter thicken and hold together better. A short resting period makes the mixture easier to work with.
The batter is too thick
Add a little more water and blend or stir again until it reaches a pourable consistency.
The crepes are breaking
Make sure the pan is properly heated and use a good non-stick pan. The first crepe may take a little longer to get right while you find the ideal heat and batter thickness.
Keep them thin
These work best when the batter is spread into a thin, even layer. Thicker crepes will take longer to cook and can be more difficult to flip.
Do I need oil?
No oil is needed if you are using a good non-stick pan. If your pan tends to stick, you can lightly grease it.
Are these gluten-free?
The ingredients themselves are naturally gluten-free, but oats can come into contact with gluten during processing. For a strict gluten-free diet, use certified gluten-free oats.
