Why is this recipe interesting?
The fun part of this recipe is that a simple carrot becomes a little sandwich bun. There is no flour, yeast, kneading, or rising time. Everything goes into the blender, then straight into a small baking mold.
The chia seeds help give the bun structure while also adding fiber and healthy fats. The carrot brings color, moisture, and a naturally mild sweetness, making this a very different alternative to traditional bread.
Is this bun healthy?
It can be a nutritious addition to a balanced meal. Carrots provide beta-carotene and other nutrients, while chia seeds are a good source of fiber and plant-based omega-3 fatty acids (ALA). The egg adds protein and helps bind the ingredients together.
It is worth remembering that one bun is quite small, so the overall nutritional value of your meal will also depend on what you use as the filling.
Is it high in protein?
It provides some protein, mainly from the egg and chia seeds, but I would not consider it a high-protein bun on its own. To make a higher-protein meal, fill it with cottage cheese, Greek yogurt-based spread, eggs, tuna, chicken, turkey, or another protein-rich filling.
Is it gluten-free?
The recipe itself contains no wheat flour and is naturally gluten-free. However, if you need to avoid gluten strictly, use certified gluten-free chia seeds and baking powder and make sure your other ingredients and preparation equipment are free from cross-contamination.
The carrot matters
If you have a powerful blender, you can add the whole carrot directly. If your blender struggles with raw vegetables, simply grate the carrot finely first. This will make it much easier to blend the mixture smoothly.
Use a small mold
A 9 cm diameter mold gives this recipe a nice bun shape and thickness. If you use a much larger mold, the mixture will spread too thin and the baking time may change.
Let it cool before slicing
The bun will be delicate when it first comes out of the oven. Give it a few minutes to cool before removing it from the mold and cutting it open. This allows the texture to firm up and makes it easier to fill.
