Note

Why are these buns interesting?

The most interesting thing about these buns is what they don't contain: there is no wheat flour or traditional bread flour at all.

Instead, soaked green lentils form the base, while psyllium husks help bind everything together and give the buns enough structure to hold a burger. It's a great example of how legumes can be turned into something completely different from their usual use.

Green lentils instead of flour

Green lentils are a particularly interesting base for homemade buns because they provide plant-based protein and fiber, while also creating a substantial, filling texture.

The flavor is slightly earthy, which works especially well with savory burger fillings, vegetables, hummus, or grilled ingredients.

Why is psyllium important?

Psyllium husks are doing a lot of the work in this recipe. They absorb water and create a gel-like structure, helping the blended lentil mixture hold together and making it possible to shape it into buns.

Don't skip the 10-minute resting time — this allows the psyllium to hydrate before you shape the buns.

A different version of my flourless buns

I've already made flourless red lentil buns, and this recipe uses green lentils for a slightly different version.

It's fun to compare different lentils and see how they behave in homemade bread recipes. If you enjoy experimenting with flourless recipes, this is a good one to add to the collection.

Great for burgers

These aren't just a substitute for bread — they're sturdy enough to actually use as burger buns. Fill them with your favorite burger patty, lettuce, tomato, onion, pickles, cheese, or whatever you normally enjoy in a burger.

They also work well for sandwiches.

Don't make them too thin

When shaping the buns, keep them reasonably thick. They will firm up as they bake, and a thicker bun gives you a better texture for slicing and filling.

Let them cool before cutting

The buns continue to set as they cool. Let them cool for a little while before slicing so they are less likely to crumble or feel too soft inside.

Can I add toppings?

Yes. Before baking, you can sprinkle the tops with sesame seeds, flax seeds, sunflower seeds, or other seeds you enjoy.

Expand All:

Are these green lentil buns gluten-free?

Yes, the recipe itself contains no wheat or gluten-containing flour. If you need to strictly avoid gluten, use certified gluten-free psyllium husks and baking powder, and make sure all ingredients are free from cross-contamination.

Are these buns high in protein?

Green lentils are a good plant-based source of protein, and they contribute a significant amount of the protein in these buns. Each bun contains approximately 6 g of protein, depending on the exact ingredients and size.

Why do I need to soak the lentils overnight?

Soaking softens the lentils, making them easier to blend into a smooth mixture. It also helps prepare them for baking.
