This flourless spinach burek is my way of connecting Balkan cuisine with Vietnamese cuisine. My sister-in-law is from Vietnam and often we try to find connections between our distant cuisines. This so called Burek is – crispy on the outside, soft and savory inside, with zero oil and no flour at all. Made with just a few simple ingredients, it’s ready in under 30 minutes and perfect when you want something healthy but satisfying. I bake this often for quick breakfasts or light dinners in my kitchen – my family loves it warm from the oven with a side of yogurt.

Ingredients
  

  • 3 Rice Papers
  • 1 Egg
  • 2 tbsp Fresh cheese
  • 50 g Cooked Spinach
  • Pinch of Salt

Method
 

  1. 1. Beat the egg in a bowl.
    2. Dip each rice paper briefly into the egg.
    3. Mix cheese, spinach, and salt.
    4. Place filling in the center and roll.
    5. Air fry at 200°C for about 10 minutes until golden.

Rice paper is an incredibly versatile ingredient often used in Vietnamese cuisine, but it works beautifully in modern fusion recipes too. It’s made from rice flour and water, then dried into thin, delicate sheets that soften quickly when dipped in liquid. Once hydrated, it becomes flexible and slightly sticky, which makes it perfect for rolling or wrapping fillings.
In this recipe, rice paper acts almost like a light pastry alternative, giving a crisp, golden texture when air-fried with egg. You can also use it for fresh summer rolls, baked chips, or even as a low-carb wrap for vegetables, shrimp, or leftovers. Because it has a neutral taste, it easily absorbs flavors from whatever filling or seasoning you use, making it a great base for both savory and slightly sweet dishes.
